Tulsa, Okla. | July 24, 2025 - What started in childhood, Nick Corcoran’s passion for barbecue is now his driving force. Corcoran grew up cooking with his father and turned that experience into a hospitality career beginning at 18 years old. In 2011, Corcoran started on a path to bring his own spin on Oklahoma barbecue.
“BBQ platters have five constituent parts — bread, meat, side, pickles, and sauce,” Corcoran explains. “Part of our philosophy is how do we add our take beyond what is expected.”
Every detail is considered and elevated. Instead of white bread, Nicky’s Smokehouse serves flour tortillas fried in beef tallow. For meats, they offer traditional salt and pepper brisket alongside things like Bulgogi inspired burnt ends and rubs that feature ingredients like dried orange peel and ginger. Their sides include traditional selections but they add their extra touch with street corn and smoked mac and cheese.
Even the humble pickle and onion is exchanged for soy-marinated cucumbers, pickled onions, mandarin oranges and candied jalapenos. In addition to a rotating list of sauces, Nicky’s Smokehouse offers their fans Chimichurri, Carolina style sauce, fire roasted salsa and of course traditional Oklahoma.
Corcoran also credits his relationship with Hasty Bake, a fellow Tulsa Market District business, to his particular style.
“Being at Mother Road Market, I can see Hasty Bake down the road,” Corcoran jokes. “I cook over an open flame and Hasty Bakes are how we bring a smokey flavor to everything.”
Corcoran has teamed up with Hasty Bake to create a real-world show room in his Mother Road Market restaurant. “I have three custom cookers and can use their differences as needed and demonstrate to others why that matters,” Corcoran explains. Hasty Bake has been a leading smoker and grill manufacturer since 1948.
“Barbeque is a labor of love and takes passion for the time and skills it takes to cook.
